A quick veggie-fix for your weeknights. Swipe left for recipe. Note: I forgot to note where you add nuts into the ingredients. Basically together with everything else!. A bit of coconut sugar was added to balance kailan’s bitter note.
INGREDIENTS
Kailan (Chinese kale), a bunch, chopped
Ground Nuts, 1/4 cup
Garlic, 8-10 cloves, sliced
Olive Oil, 1/4 cup
Gluten-free Soy Sauce, 1 tbsp
Sesame Oil, 1 tbsp
Coconut Sugar, 1-2 tsp
Salt and Pepper
Big Red Chili, 1-2, sliced (optional)
DIRECTIONS
Pre-heat oven at 160°C.
Wash and cut kailan (I divided them into 4 parts – the stems are the best part!).
Mix chopped kailan, garlic and chili in a baking dish.
Drizzle olive oil, add sesame oil, very little salt, pepper and coconut sugar.
Mix well using salad spoons.
Roast for 20 minutes.
