Kampung Eggs Breakfast Skillet

Breakfast is the most important meal of the day that we generally do not wish to spend so much time preparing. This simple recipe can nourish you, and save your time, too.
Time needed: 30 minutes (incl.prep).

Ingredients:
8 Kampung Eggs
Garlic, shallots, and herbs of your choice
Mushrooms of your choice, sliced
Celery stalks, sliced
Cherry Tomatoes
Psyllium Husk, 1 tbsp (optional)
Sea Salt, honey
4-6 Sourdough pieces
Good quality cheddar cheese
Greek Yogurt, 2 tbsp
Olive Oil
Topped with:
A bunch of leafy greens and Flaxseed Oil, or Extra Virgin Olive Oil

Directions:
Pre-heat oven at 160C. Lightly beat eggs, sea salt, herbs, and psyllium husk with a fork.
Drizzle some olive oil on a pre-heated skillet, sauté garlic and shallots, then mushrooms and celery, too.
Pour egg mixture into skillet, and add some cherry tomatoes. Let it cook for a few minutes. Add yogurt into the mix.
Place sourdough slices on top, then cheddar slices. Drizzle a bit more olive oil if needed, then carefully transfer to the oven. Bake for 15-20 minutes.
Top with leafy greens and flaxseed oil before serving.
