INGREDIENTS
Sweet Potato, 1, large
Ripe Avocado, 1/2
Onion, 1/4
Lemon or lime
Salt and Pepper
DIRECTIONS
Scrub potatoes’ skin, wash under running water.
Pre-heat oven at 400°F or 200°C.
Season very lightly with salt and pepper.
Bake potato for 45 minutes.
Meanwhile, prepare guacamole by mashing avocado, mixing it with
chopped onion, salt, pepper and a drizzle of lemon.
Once the potato is ready, let it cool. Then slice the center lengthwise.
Fill the gap nicely with guacamole. Serve.
